Meredith and Sheryl: This little quinoa cake masterpiece is the brain child of healthy eating guru Heidi Swanson and can be found in her book “Super Natural Every Day”. I tweaked it a bit based on what I had on hand and so my version contains cooked quinoa, eggs, green onions, garlic, red thai chilli, parmesan cheese, bread crumbs, parsley and salt and pepper. They are fried in a bit of olive oil and/or butter. If you need exact measurements email me!

…I’m wondering the same thing as Meredith – quinoa is a staple for me but I’ve never made cakes! They look soooo good!
